Default Summer Gazpacho

Summer Gazpacho
1 cup tomato juice
15 very ripe medium tomatoes, coarsely chopped
2 medium English cucumbers, peeled and roughly chopped
6 cloves roasted garlic
1/2 cup red wine vinegar
1/2 red bell pepper, finely diced
1/2 yellow bell pepper, finely diced
1/2 small red onion, finely diced
Few drops of lemon juice
Few drops of worcheshire sauce
Extra virgin olive oil to taste
Salt and pepper to taste

Place some salt on the cucumbers and allow to purge for 10 minutes. Rinse off the cucumbers well.

Put 1/4 cup of the red wine vinegar into the chopped onions and allow to stand at room temp for 15 minutes.

Add all ingredients into a blender and add olive oil into the mixture while blending. Season with salt and pepper. Serve cold or room temp.

forgot to add that the tomatoes should be peeled. To quickly peel tomatoes, cut out the core and make an "X" in the bottom with a knife. Drop in boiling water for 30 seconds to 1 minute and immeditely drop into ice water. You can then peel the tomatoes very easily.

Hmm.. I would attempt it but the only things I like in that list of ingrediants are garlic, worcestershire sauce, and salt and pepper. And that wouldn't make much of a meal.

But sounds like something my dad would like.. He likes all the bell peppers and onions and stuff.

sprinkle salt on it and put it in a colander. The juices and undigestable stuff in the cucumber will come out.

Actually, yeah.. I like it if its mashed up enough that Im not biting pieces of tomato.

..and I love ketchup. More than usual people.. (however, it's probably pretty processed by then).

yes, this is a cold soup.

I had crazy cravings for gazpacho the past 2 days.

Dave, the tomato is blended together with everything else, so you can barely discern it.
