Default Lemon Poached Salmon

Lemon Poached Salmon
4 salmon steaks (about 6-8 ounces each)
1 lemon, sliced in about 6 slices
1 cup white wine
1 cup low fat vegetable broth
2 bay leaves
1 tsp dried tarragon
Salt and freshly cracked pepper


1. Place salmon in an oven 8X8 pan or a 9X13 pan.
2. Pour wine and vegetable broth over salmon.
3. Place lemon, bay leaves, and dried tarragon in liquid with salmon.
4. Salt and pepper to your taste.
5. Place in a 400-degree oven and cover with parchment paper that has been sprayed with vegetable oil. Put the sprayed side against salmon to prevent from sticking.
6. Poach salmon for about 20 minutes. Remove and serve with roasted vegetables.

i dont like bay leaves so i left that and the taragon out but it came out great. loved it!


but the best part is that it was really easy to make

this sounds good. I was never a fan of salmon but have recently begun liking it. how is salmon as leftovers? cooking 4 salmon steaks is a bit much for 1 person, so I'd have to save the other 3 as leftovers.

Cindy is the samon eater, she buys it pre vaccume sealed at sam's club for like $20 or $30 and their single servings they are actually really good. This way you only use what you need.

Super easy Salmon would be rub some olive oil on top, put on a rack broiler on foil under the broiler for like 12-13 minutes, then squeeze some lemon on it. Steamed broccoli and carrots as a side.

I live near a Whole Foods and kinda near a good farmer's market. Eating fresher foods requires a lot of trips to the store. At least twice a week.

I may have to try some prepackaged frozen. It's kind of against my nature, but... my whole eating process is up for reevaluation.

A fresh fish tip: My famer's market puts fish in a bag and puts tha bag in bag of ice. Fish needs to be kept colder than your fridge is set for, so, I store it (sealed up) in a large bowl of ice in the fridge.

I always thinks it's a good idea to take an ice chest when you go to the store for meats and other foods that need to be chilled.

frozen veggies and fruits can often be fresher than their non-frozen counterparts, as they are often picked and then frozen soon thereafter. I really like the seawater packed frozen fillets from costco (not much degradation in the protein of fish packaged this way)
