Default Tofu Eggplant and Brown Rice



First cook brown rice

Heat the oven to 350



1 medium sliced onion
2 cups of Tofu (sliced in cubes)
2 cups of tomatoes ( sliced it whatever you want),
2 medium Eggplants (sliced it in circle then cut it in 1/4 size)
Other stuff add as much or as little depending on your liking: extra virgin olive oil (EVOO), pepper, garlic, and slices of lime


Get a baking pan and put the sliced tomatoes and eggplants. Sprinkle some black peppers and garlic powder. Then pour a little bit of olive oil. Be generous with the EVOO on the eggplants and tomatoes (this will help it to cook it well and not burn) Put it in the oven and bake it for about 30 minutes.


Get a pan set your stove to medium heat then pour some olive oil ( wait till is hot then put the cubes tofu) Tofu is cooked when is brown all over. Set it aside into some paper towel to drain the excess oil. Then on the same pan pour a little bil of olive oil and put the onion rings. wait till is brown (caramelized) then once is brown put it over some paper towel to drain.

It's probably very good for you nutrition wise-what with the brown rice, tofu, and veggies...I'm sure it has a good amount of fiber, no? Again, looks yummy and fancy...like something from a fancy smancy restaurant, but easy enough to make at home...
