I don't see how carbohydrates would contribute to the problem if they aren't being used. Also, I know what overtraining is exactly, but as a syndrome, it affects so many systems, I would think that it would be more of a hormonal protection than a result of diet. Immune system response is lowered, sleep cycles are disturbed, the resting heart rate is raised, and there is emotional disturbance as well.
Since massage appears to relieve overtraining, along with Ice baths, I would be looking to the muscle fibers themselves and how they are protecting them selves from further damage.
But I'm just a runner that would never run 10 miles for three days in a row.
